Preparation:

The recipe for asparagus risotto heralds the arrival of spring. A few easy steps, to be followed carefully, will make a delicious vegetarian dish that is simple yet refined, enhancing the delightful taste of a beloved and versatile vegetable.

The cooking method for risotto is a typical Italian preparation. Only in Italy, in fact, is rice slowly cooked with the addition of a little broth at a time. To cook risotto with asparagus, we recommend using a good vegetable broth, preferably homemade following the basic recipe. It’s more delicate in flavor compared to meat broth.

We also offer a recipe that does not include the classic deglazing with white wine. However, feel free to add this step: the result will certainly be excellent, slightly more aromatic.

To prepare asparagus risotto, start by steaming the asparagus with a pinch of salt for about ten minutes: they should remain quite crispy. Cut off the tips.

Melt 15 grams of butter in a pan, let the asparagus tips flavor for 5 minutes, and set them aside. Cut the rest of the asparagus into rounds. In a saucepan, melt 30 grams of butter with 2 tablespoons of oil and let the chopped onion soften. Add the rice, toast it briefly, then add the asparagus rounds.

Stir with a wooden spoon and then moisten with a couple of ladles of hot broth. Cook the risotto as usual, adding a ladle of broth as soon as the previous one has been absorbed. At the end of cooking, adjust the salt, add the asparagus tips, and stir in the remaining butter and grated cheese.

Mix gently and let it rest covered for a couple of minutes, then serve the asparagus risotto piping hot.

Savor The Season

By following these easy steps and using high-quality ingredients, you can create a culinary masterpiece that celebrates the fresh and vibrant taste of asparagus. Whether enjoyed as a comforting meal on a cool spring evening or as an elegant centerpiece for a special gathering, this risotto is sure to delight the senses and leave a lasting impression on all who taste it.
