The cooking method for risotto is a typical Italian preparation. Only in Italy, in fact, is rice slowly cooked with the addition of a little broth at a time. To cook risotto with asparagus, we recommend using a good vegetable broth, preferably homemade following the basic recipe. It’s more delicate in flavor compared to meat broth.

We also offer a recipe that does not include the classic deglazing with white wine. However, feel free to add this step: the result will certainly be excellent, slightly more aromatic.

To prepare asparagus risotto, start by steaming the asparagus with a pinch of salt for about ten minutes: they should remain quite crispy. Cut off the tips.
